Cauliflower Rice

Being of Middle Eastern decent, it's no lie that we love our rice! But personally, i'm not a total fan of eating a bowl of starch topped with some glistening butter! (Although that probably sounds tasty!) I decided to opt to a healthier version with my all time favorite ingredient-Cauliflower! Enjoy!
Recipe:
1 tbs. butter, optional
2 tbs. sea salt
2 c. water
1/8 tsp. saffron + 1 tbs. hot water
1 whole cauliflower, grated

Serving: 1/4 c. makes 4

The easiest way to grate up all your cauliflower is using a food processor. Just load up and pulse!
Next, put into saucepan with water and bring to boil. Allow to simmer and add butter (if using), saffron that has been absorbed by the hot water and add salt.~ENJOY!
