Recipe:
4 oz. unsweetened baking chocolate
2 tbs. hot water
1/2 c. unsalted butter
6 eggs, cold
1 tsp. vanilla extract
1/2 tbs. ground cinnamon
2 tbs. unsweetened cocoa powder
1 c. baking splenda (or any other sugar)
Yields ~ 12 slices
Coarsely chop unsweetened baking chocolate. I like Baker's Chocolate but any will do!
In a double boiler, add unsalted butter and chopped chocolate and melt. Slowly add hot water right before the mixture is completely melted.
Let chocolate come to room temperature before working it into mixture.
With an electric mixer, whisk together cold eggs. Allow eggs to become "stiff" (different than egg whites stiff, it should be a thick ribbon) Add in vanilla extract.
Fold eggs into melted chocolate. Add ground cinnamon, sugar of choice and unsweetened cocoa powder. The mixture should resemble a brownie mixture.
Preheat oven to 350 degrees. Grease an 9 in. springboard pan.
Pour entire mixture into pan and pop in oven for ~ 30 minutes (or until tooth pick comes out clean). Let cake cool for about 20 minutes before frosting.
