But I truly am loving my variations on Cauliflower as i've grown older.
Here's a new one: Garlic Cauliflower Couscous. Super super easy to make and boy is it tasty!
Recipe:
1 whole Cauliflower, finely grated
1 whole Cauliflower, finely grated
5 cloves of garlic, chopped
2 tsp. sea salt
1 c. sliced mushrooms
1/2 yellow onion, chopped
2 tbs. EV olive oil, for sautéing (or any other oil you prefer)
chopped cilantro, to garnish
Yields: 5, 1/3c. servings
Grate cauliflower, finely using a food processor is the easiest! Chop up onions and saute them with olive oil and then add in mushrooms, chopped garlic, salt, garlic powder and finally add in grated cauliflower. Saute until soft ~ 8 minutes! Serve with chopped cilantro and ~ENJOY!
