Zucchini Baked Fries

I just love french fries, don't you? Don't lie... I know you do! But at the same time so many places are telling us how bad they are for us which makes us all feel terrible! So who loves Zucchini? Lets make them into fries...shall we?
Recipe: 
4 green zucchini, sliced into quarter slices
1/3 c. garlic powder
3 tbs. paprika
1 tbs. black pepper
2 eggs
1 tsp. red pepper flakes
1/2 c. flax-meal golden
1 tbs. parsley flakes, dried
1c. parmesan cheese, grated
sea salt & black pepper

Yields ~ 20 fries

Preheat oven to 350 deg. (F). Begin your assembly line. 
Bowl # 1 is your "pre-egg" dusting. This is usually flour in all frying/baking cases...but NOT OURS! Our  "pre-egg" dish is flax meal and parsley flakes with a little sea salt.
Bowl # 2 is your "egg wash" just scramble up two eggs. Easy huh?
Bowl # 3 is the big WHAMMY! This bowl is essentially your "seasoning" this is what will have the strongest taste on your fries. This bowl is made with garlic powder, black pepper, paprika and parmesan cheese.

Wash your Zucchini and cut up into 1/4 in. slices!
Put your zucchini slices in "pre-egg" roll them around. They won't coat as well as flour will but it's okay, don't worry! Then dip your flax-meal dusted zucchini strips in your egg. Then go into your "seasonings" bowl and make sure to get  a good chunk of parmesan cheese on your zucchini. If it doesn't stick well, just sprinkle over the slices when you put them in your baking dish.

Bake your zucchini for ~20 minutes, until golden brown and crispy! ~ENJOY!
